Pancake Day, What are you going to have on yours?

Here is a simple pancake recipe to enjoy with your favourite toppings

Of course pancakes are not just for pancake day but here in the UK it is the traditional day to enjoy them in copious amounts.

What is Pancake day?

Pancake day, or known as Shrove Tuesday, here falls on the day before Lent, the 40 days Jesus was said to have fasted.

Shrove Tuesday is 47 days before Easter Sunday so with Easter being movable then Pancake Day is on a different day each year too depending on the Equinox etc.

Why pancakes you may ask. Well, in the old days they needed to use up all the eggs and fat before the fasting period. Pancakes in this UK style became the perfect way of using it all up.

Ingredients

  • 150 g Plain Flour

  • 2 Large Eggs

  • 275 ml Milk

  • 1 Tbsp Olive Oil ( plus a little more for the frying pan)

  • ( a pinch of salt if required)

Directions

  • Put the plain flour in a bowl and make a well in the centre – whisk the eggs together and then place in the well of the flour and add a small amount of your milk.pancake mix ingredients in bowl with whisk
  • Whisk this together until you have a smooth cream and then slowly add in the rest of the milk a bit at a time until all the milk has gone
  • Add in your olive oil and whisk again
  • Place the mixture in a jug and cover with cling film then place in the fridge for at least 30 minutes
  • Heat up your non stick frying pan and add in the oil so that it becomes very hot- then pour out the oil into a heat proof cup or bowl by the side of your frying pan
  • Pour a little of the batter into the frying pan and tip it so that the batter covers the base and cook until you can slide it along the pan without it sticking and then have a go at flipping the pancake so that you can cook the other sidefrying the pancake
  • When fully cooked slide onto a plate

Repeat this until you have used all the mixture

Enjoy with your favourite toppings
