A hearty Keto Beef and Mushroom stew is a perfect hug in a bowl to be enjoyed after a long walk or any outdoor activity. With it’s perfect blend of succulent beef, vegetables and a thick, warming sauce this dish goes beyond the norm with the addition of my two secret ingredients. Keto friendly beer and rich dark chocolate are added to make a smooth and tasty, satisfying sauce.

This comforting combination of high quality braising steak chunks, with a beer and vegetable stock based sauce is highly adaptable. Here I use plenty of red onions and mushrooms, adding broccoli towards the end of the cooking time, but if you prefer a non Keto Stew, why not add Chantenay carrots after you saute the mushrooms. In fact you can get super creative and add your choice of vegetables including garden peas, green beans or Brussels sprouts.

I find that Beer gives the sauce of a stew extra depth and satisfying flavour, if you are following a Keto only diet be sure to use a low carb option.

As a chocolate lover, I enjoy using my favourite dark chocolate to give a savoury dish a little more colour and punch. Remember to make a chocolate selection of 85% cocoa and over to ensure Keto friendliness.

This recipe serves two if you are having the stew on its own, however, to create a plated meal using this stew, why not add a good portion of cabbage mash.

Ingredients

  • 600 g Cubed Braising Steak

  • 1 Chopped Red Onion

  • 400 g Chopped Mushrooms

  • 1 Head of Broccoli Chopped into Florets

  • 100 ml Vegetable Stock

  • 2 tbsp Olive Oil

  • 100 ml Keto Friendly Beer

  • 1 tsp Garlic Powder

  • 1 tsp Dried Thyme

  • 2 pieces 85% Dark Chocolate

  • Salt and Pepper to Taste

Directions

  • In a large pan, heat the olive oil and brown the beef.
  • Add the onion and the mushrooms, fry until soft.browning the meat
  • Season with salt, pepper, garlic powder and thyme.
  • Make the vegetable stock.
  • Add the beer, you can add more later should the mixture start to dry.
  • Simmer on a low heat for 1.5 hours, stirring occasionally.stirring in the stock
  • Add the broccoli for the last 10 minutes of cooking.
