Ingredients

  • 2 large chicken breasts (or adjust according to servings)

  • 50 g plain flour

  • 60 g finely grated parmesan cheese

  • salt to taste

  • 1 tsp garlic or onion powder

  • freshly ground black pepper

  • For the sauce
  • 5 tablespoons olive oil

  • 30 g butter

  • 1 finely chopped onion

  • half a head of garlic (yes, really!)

  • 300 ml chicken stock

  • 300 ml double cream

  • 60 g finely grated Parmesan cheese

  • 2 tablespoons fresh parsley

Directions

  • Begin by splitting the chicken breasts in half horizontally, giving you thinner pieces. This ensures even cooking and a quicker preparation time.
  • Liberally season the chicken with salt, pepper, and either onion or garlic powder/granules. Adjust the amount of seasoning based on your personal taste.
  • In a bowl, mix 60g of grated Parmesan cheese with 50g of plain flour. Dredge the seasoned chicken in this mixture, shaking off any excess.
  • Heat 2 tablespoons of olive oil and 15g of butter in a large frying pan over medium heat. Make sure the heat isn’t too high.
  • Fry half of the chicken breasts in the oil-butter mixture until they are cooked through and golden. Transfer them to a warm plate and repeat the process with the remaining chicken breasts.
  • In the same pan, reduce the heat slightly and add the finely chopped onion. Cook the onion in the remaining juices until soft and translucent.
  • Flatten six cloves of garlic using the back of a knife and add them to the pan along with the remaining olive oil. Cook for 2-3 minutes, infusing the oil with garlic flavor. Be careful not to burn them.
  • Pour the chicken stock into the pan, using it to deglaze the pan while stirring and scraping up any browned bits. Allow the stock to reduce to about half its original volume.
  • Lower the heat and add the double cream to the pan, giving a good stir. Let the sauce simmer for a couple of minutes to allow the flavors to meld together.
  • Mix in the remaining grated Parmesan cheese and cook gently until the cheese melts, creating a luscious, creamy sauce.
  • Season the sauce with salt and pepper, adjusting to taste.
  • Return the cooked chicken breasts to the pan, allowing them to simmer in the sauce for a few minutes until the sauce thickens and coats the chicken.
  • Garnish the dish with fresh parsley and a sprinkle of black pepper.
